The Meat Specialist – Retail Butcheries will play a critical leadership role in overseeing daily operations across multiple butcheries, ensuring product quality, regulatory compliance, team performance, and customer satisfaction. Working closely with plant operations, procurement, and retail teams, this role requires deep industry knowledge, operational excellence, and a hands-on approach to drive consistency, profitability, and brand growth in a fast-paced, field-based environment.

Duties and Responsibilities

The Meat Specialist – Retail Butcheries is a senior leadership role responsible for managing multiple butchery locations and overseeing the end-to-end performance of retail operations. Key responsibilities include:

  • Overseeing daily operations of beef and poultry butcheries, ensuring quality control and consistency across locations
  • Managing product sourcing, storage, cutting, packaging, and display in accordance with food safety regulations
  • Monitoring stock levels and inventory variances while minimising waste and ensuring yield optimisation
  • Leading recruitment, training, scheduling, and performance management of regional butchery teams
  • Implementing standard operating procedures (SOPs) across hygiene, customer service, and workflow
  • Collaborating with the processing plant and procurement teams to maintain supply and control costs
  • Analysing sales trends and executing strategies to boost revenue, customer retention, and profitability
  • Driving brand consistency and quality assurance at customer touchpoints and across retail environments
  • Handling customer complaints, building strong retail relationships, and engaging with chefs and partners
  • Supporting the Head of Plant Operations in executing growth strategies and operational upgrades


Skills experience and attributes

  • Diploma or Bachelor’s degree in Food Science, Agribusiness, or a related field
  • At least 9 years’ experience in butchery or meat retail operations, with multi-outlet or high-volume leadership experience
  • Proven expertise in beef and poultry product knowledge, carcass breakdown, and yield management
  • Familiarity with HACCP, GMPs, and regulatory food safety compliance
  • Strong leadership and team-building capabilities across diverse environments
  • Analytical mindset with the ability to manage data, inventory, and cost controls
  • Excellent interpersonal, customer service, and conflict-resolution skills
  • Ability to work flexible hours, including weekends and holidays, and travel frequently
  • Passionate about quality, consistency, and creating a top-tier customer experience in the retail meat industry
